Chickpea Salad with Fresh Ginger




Ingredients

  • 2 cups canned chickpeas, rinsed and drained
  • 1/2 cup cashews, lightly chopped
  • 2 large carrots, finely grated
  • 1 scallion, finely chopped
  • 3/4 cup cilantro, chopped
  • 1 clove garlic, minced
  • 2 tablespoons ginger, minced
  • 1 teaspoon cayenne
  • 2 teaspoons paprkia
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • salt and pepper as desired

Instructions

  1. In a large bowl, combine all ingredients. Toss to combine.
