Chickpea Salad with Fresh Ginger
Ingredients
- 2 cups canned chickpeas, rinsed and drained
- 1/2 cup cashews, lightly chopped
- 2 large carrots, finely grated
- 1 scallion, finely chopped
- 3/4 cup cilantro, chopped
- 1 clove garlic, minced
- 2 tablespoons ginger, minced
- 1 teaspoon cayenne
- 2 teaspoons paprkia
- 1 lemon, juiced
- 1/4 cup olive oil
- salt and pepper as desired
Instructions
- In a large bowl, combine all ingredients. Toss to combine.
